soy sauce maker and merchant, Oi-ke shoyu traces

Toward the end of the 1990s the vacant old house of a soy sauce maker and merchant was sold, dismantled, and transported to the east side of the island to join other period buildings in an open-air museum where it was reassembled. For some reason this big tub (fermentation? storage?) was left behind; together with the stone lantern just visible behind the tree in the background (left). The 5 's' flavors made up much of the premodern language of Japanese tastes: sa (sato =sugar), shi (shio =salt), su (su =vinegar), se (shoyu =soy sauce), so (shoga =ginger).
