Working the enset plant

The false-banana or enset plant is used to make a bread called kotcho/kocho - the enset insdes are scrapped to free the starchy pith from the fibres (for which there are other uses), allowed to ferment (buried under ground) until a workable dough in produced. the unleavened bread is usually eaten in a flat form and traditionally is eaten with honey or with a chili-honey mix called data.
